Pastelli is Greece’s famous honey sesame bar, which is a sweet snack that can be eaten at any time of the day.
Our homemade recipe creates the original sesame and honey version, however, you can also add other nuts such as pistachios, walnuts, and almonds to the mixture for some extra crunch!
*Makes around 25 pieces
Ingredients
-500 gm sesame seeds, toasted in the oven
-300 gm Greek honey
-25 gm vanilla sugar
-1 & 1⁄2 tablespoon sugar
-Pinch of salt
-½ teaspoon olive oil
Method
-Lightly toast sesame seeds in the oven.
-Combine honey with the sugar and vanilla sugar in a saucepan, and heat over a low/medium flame with olive oil until it starts to bubble. Add a pinch of salt.
-Add the sesame seeds. Cook slowly, stirring constantly for about 10 mins until the mixture becomes a golden colour, do not overcook or allow to brown.
-Place baking paper on a tray. Pour the sesame mixture onto paper and work the surface with a spatula until it has an equal thickness of about 1 cm.
-Place another sheet of baking paper on top of the sesame mixture, and using a rolling pin or spatula, gently even out the surface.
– Cut into diamond shapes and let it sit at room temperature before serving.
