Kolokithokeftedes are Greek Zucchini Fritters with Feta, which is by far one of the most popular meze dishes in Greece!

This delicious vegetarian appetizer is perfect all year round and can be served as a side dish, or for lunch/dinner with some salad and tzatziki! 

Ingredients 

-1 kg zucchinis, grated

-4 spring onions, finely chopped

-2 tbsp fresh mint, finely chopped

-2 tbsp parsley, finely chopped

-½ tbsp basil

-2 eggs

-400 grams feta cheese, grated

-salt and freshly ground pepper (to taste)

-150 gm all-purpose flour

-3 table spoons extra virgin olive oil

-oil for frying

Method

-Grate the zucchini and place in a colander with some salt. Squeeze them with your hands to get rid of the excess water. Leave for around 30 minutes and squeeze again to ensure the majority of water is gone.

-Add all ingredients in a large bowl and mix well with your hands, until combined and the mixture is firm enough to turn into small patties. Add a little more flour if needed.

-Cover bottom of the pan with olive oil and heat the oil on medium to high heat.

-Pick up spoonful's of the mixture and carefully add them to the oil. Do not overcrowd your pan, to ensure you can easily flip them.

-Gently press down on the patties to spread them out a little.

-Fry on both sides until nice and golden, do not burn.

-Repeat the same process until all of your mixture is done.

-When ready, transfer to a dish lined with paper towels to drain excess oil.

-Serve hot or hot with some fresh cold yogurt or tzatziki.
