Tsoureki stuff with graviera cheese and bacon

Although we think of tsoureki as an Easter sweet bread, what if we told you could have a delicious one with graviera cheese and bacon!

Ingredients:

550gr. Flour for All Uses, sifted
30gr. Fresh Yeast
250ml milk, lukewarm
50ml extra virgin olive oil
1 egg, lightly beaten
1 teaspoon sweet sugar
1 teaspoon sweet salt
250gr. graviera cheese, in small cubes
200gr. bacon, in small cubes
To spread: 1 egg, lightly beaten

Method:

Step 1

In a bowl, dissolve the Fresh Yeast and the sugar in the warm milk. Put in a large bowl the Flour for All Uses and pour in the centre the yeast mixture. Stir until the flour absorbs all the liquid. Add the egg, olive oil and salt and continue kneading until the dough becomes soft and elastic. Cover the dough with a towel and leave it in a warm place to double in volume.

Step 2

Knead again for a while and cut the dough into three equal pieces. With the rolling pin, open each piece in a rectangular strip. Put 1/3 of the graviera cheese and 1/3 of the bacon in the centre. Shape the dough into a rope and repeat the process with the other two pieces of dough. Knit the three ropes into a plait. Put the buns on a plate lined with oil paste, cover them with a towel and leave them in a warm place to swell.

Step 3

Lather them with the beaten egg and bake them in a preheated oven at 180°C for 15 minutes. Then lower the temperature to 160°C and continue baking for another 15-20 minutes.
And that's it!
