A most different recipe for lentils can be found in the kitchens of Astypalea, a beautiful Dodecanese island.
The classic Greek lentil soup is added with homemade pasta on the island.
Ingredients:
250 gr. lentils
50 ml olive oil
1 onion, finely chopped
3 cloves garlic
1/2 teaspoon sweet cumin
1 bay leaf
250 gr. ripe tomatoes, grated
salt, black pepper
For the pasta:
100 gr. flour
1/4 teaspoon sweet salt
100 gr. peponaki (flat risoni) pasta
Method for lentils
- In a deep saucepan put the lentils in plenty of water and then strain them. In a dry pot, heat the olive oil over medium to high heat and sauté the onion and garlic for 1 to 2 minutes until they give off their aromas.
- Add the lentils, cumin, bay leaf, tomatoes, salt, pepper and 500 ml of hot water or more until boiling.
- Add the pasta to the lentils six to seven minutes before removing the food from the fire.
- Serve the lentils with chopped mint.
