Tourlou Tourlou (Briami): Delicious Greek Ratatouille recipe

Tourlou Tourlou means "all mixed up" and is a Greek take on ratatouille.
This traditional Greek vegan dish is basically a medley of vegetables roasted in the oven long enough for them to sweeten and soften up.
The baked vegetable meal is very similar to French ratatouille but more liberal with the vegetables and extra virgin olive oil content.
Full of hearty veggies and extra virgin olive oil goodness, this vegan dish is delicious and perfect to make any time of the year.

Vegetables:
2 potatoes - sliced
1 large sweet potato - sliced
1 large eggplant - diced
1 brown onion - sliced
1 large zucchini - diced thick
2 carrots - sliced
Feta cheese for sprinkling once cooked (optional)
Fresh parsley to garnish
For the sauce:
400g crushed tomato
1/2 cup extra virgin olive oil
1/2 tsp dried oregano
Salt and pepper to taste
3/4 cup water

Tourlou Method:

Arrange vegetables into a large baking tray.
Combine all the ingredients for the sauce in a bowl and pour it over the vegetables.
Mix all ingredients thoroughly and cover with a layer of baking paper then tightly with aluminium foil.
Bake at 180C fan-forced 40 minutes or until potatoes is cooked.
Uncover and cook for additional 15-20 minutes to develop colour.
Once ready drizzle extra olive oil over the top, a sprinkling of feta and garnish with parsley.
