Cod croquettes - An alternative for March 25

Cod croquettes are a nice alternative from the Greek-styled fried version for those adhering to the Annunciation (or Evangelismos in Greek) of the Theotokos.

The Annunciation is one of the Great Feasts of the Orthodox Church, celebrated on March 25, which is also when Greeks celebrate Independence Day. This is one of only two days during Lent, the other being Palm Sunday when fish is permitted.

Although we like to traditionally fry cod and serve it with delicious skordoalia, how about a croquette version for an alternative to the all-time classic?

Ingredients:

400g salted cod
200g boiled potatoes
1 dry onion, chopped
2 spring onions, chopped
3 tsp. of dill soup
1 egg
2 tsp. tablespoons of white vinegar
¾ tsp. sweet baking powder
50g flour for all uses
½ tsp. dry sweet oregano
some dill chopped
salt, pepper freshly ground seed oil for frying

Procedure

Step 1: Boil the cod for 10 minutes. You press it well to remove excess liquid and pluck it into a bowl.

Step 2: Add the onions, herbs and potatoes melted with a fork.

Step 3: Pour the egg, vinegar, baking powder, oregano, salt and pepper and flour and mix the mixture well. Leave it for 30 minutes in the refrigerator.

Step 4: With a spoon take a little bit of the mixture and fry it in hot seed oil until the croquettes turn golden.

Step 5: Take them out with a slotted spoon and place them on a plate lined with absorbent kitchen paper.
