How to make delicious homemade garlic bread with cheese

Many of us love garlic bread and choose it as an appetiser with pizza and any other main course.

If you want to raise them to another level, you can try them with cheese, a version that is a favourite.

This particular recipe uses the Poolish method so that the bread can become particularly fluffy and light and can be eaten pleasantly even the next day.

Poolish preparation


310 g flour
310 ml water
4 g dry yeast

Place the water in a taper or a bowl. Put the yeast in the flour and slowly pour the flour into the water while mixing.

After a few minutes, as soon as the mixture becomes creamy, cover it and note the level of Poolish with a marker or rubber band.

Leave it outside the fridge for two hours, then put it in the refrigerator for 24 hours.

Preparation of dough

(2 balls of 400 g will prepare 18-120 garlic bread with cheese)


Poolish 620 g
Flour 160 g
Salt 15 g
Olive oil 15 ml


Take the Poolish out of the fridge 2-3 hours before making the dough. It will have doubled in volume and will be thick, creamy and full of bubbles. If you leave it outside the refrigerator for too long, its strength begins to decrease.

Knead the Poolish with half the amount of flour. Then, add the salt. Then add the rest of the flour and, finally, the olive oil.

Once the ball is formed, cover it and let it rest for 30 minutes. Reshape it into a ball by kneading it a little, and the reason we do this is to trap more air inside the dough.

Let it rest covered for another 20 minutes and then make it into two balls of 410 g.
Leave them covered for 2 hours until they double in size.

Preparation (Garlic)


Three cloves of garlic
100ml olive oil
15g parsley

Place the garlic, olive oil and chopped parsley in a multi-cutter. Grind it for a while. If you want the taste of garlic to be even stronger, add 1 to 2 more cloves.


Slightly press the balls and open them without thinning them enough. Make several holes in the dough with a fork so it does not swell during baking, and brush it with the garlic oil  prepared. After preheating the oven to 200 degrees, bake for 7-8 minutes.

Then, take the garlic bread out of the oven, add the cheese and bake for another 7-8 minutes at the same temperature. They are now ready.

Brush them again with the garlic oil when they come out of the oven, bake them, and add sea salt and chopped parsley. Cut into slices and serve.
