An all-time classic politiki (Greek cabbage) salad, which also has some original ingredients such as raisins and olives that will lift its taste.
Materials for four servings:
500 gr. white cabbage, very finely chopped
Two carrots, grated
Six sprigs of celery, chopped
½ lemon, the juice
2 Florina peppers roasted in very thin slices
½ bunch parsley, chopped
2 tsp. black currant soup
Afrin salt
1 tsp. sweet bukovo
Two tsp. of apple cider vinegar
½ clove of garlic, melted
Two tsp. of pine nuts, roasted
100 ml i.p. olive oil
12 Kalamon olives, pitted
For serving
a few sprigs of parsley
a few leaves of celery
a little extra virgin olive oil
Procedure
Step 1: In a large bowl, put the chopped cabbage, carrot, celery and lemon juice, add salt and mix with your hands for 2 minutes. Leave in the fridge for 30'.
Step 2: Then strain all the liquids, add all the remaining ingredients, and mix for 2-3 minutes until they are very well blended.
Step 3: Finally, add the kalamata olives, serve them with parsley and celery leaves, and sprinkle them with extra olive oil.
