Chicken with potatoes, lemon and rosemary

There are some foods that suit all seasons, all days of the year and any occasion.

Chef Sotiris Evangelou makes chicken in a pot with potatoes flavoured with rosemary. It is my favourite homemade dish!

Materials

One chicken 1,200 g, cut into eight pieces
1 kilo of potatoes, cleaned and cut into wedges
1 cup extra virgin olive oil
One medium onion, sliced
One clove of garlic, sliced
Two sprigs of rosemary
1 tsp. mustard soup
Two lemons, the juice
One pinch of pepper
Two pinches salt flower

Procedure

Step 1

Put the pot on the fire with the extra virgin olive oil, and shield the chicken from all sides as soon as it heats up. Remove it from the pot, and add the quince potatoes, onion and garlic. Stir until they are glossy, and put the chicken back in the pot.

Step 2

Add the rosemary, salt, and pepper and add enough water to cover the food. Bring to a strong boil, cover and let the food cook for an hour and a quarter.

Step 3

Dissolve the mustard with the lemon juice, pour the mixture into the pot, shaking it slightly so that the ingredients are well incorporated. Continue until it boils again. Take the food off the heat, let it rest for 10 minutes, and serve.
