Moshari Kokkinisto (Greek Beef Stew in Tomato Sauce) is a favourite that every good Greek mum cooked, often starring at Sunday lunch.
Materials
About 1,300 gr. beef, in pieces
One large onion, chopped
Three ripe grated tomatoes or one tin of peeled tomatoes
1-2 tablespoons of tomato paste dissolved in one cup of water
½ cup extra virgin olive oil
3-4 allspice grains
One cinnamon stick
Two bay leaves
Salt Pepper
Procedure
Step 1
Boil the meat in a pot with plenty of water that will cover it well, the water going at least two fingers above the meat, for about 1 hour to 1 hour and 30 minutes until it is tender. Skim the top of the water time to time.
Step 2
Remove the meat with a slotted spoon to a plate and keep the broth in a bowl. Pour the extra virgin olive oil into the same pot and sauté the onion for 3-4 minutes. Then, add the meat and sauté for a while.
Step 3
Add the bay leaf, the allspice, the (peeled) tomatoes, the tomato paste dissolved in hot water, salt, pepper and the meat broth. Stir and cook until the meat is well cooked and left with a nice sauce.
Step 4
Serve accompanied by French fries, rice, mash potatoes, or bucatini pasta.
