Chicken with potatoes, the Sunday meal that the whole family loves, with plenty of lemons…
Materials
Six potatoes, sliced
One large onion, sliced
Four cloves garlic, sliced
1 tsp. dry oregano or thyme
Four chicken legs cut in half
1 tsp. powdered mix of spices for chicken
Two tomatoes, sliced
Four stalks of celery with the leaves
1 cup extra virgin olive oil
juice of 2 juicy lemons
2 tsp. mustard (optional)
salt, freshly ground pepper
Procedure
Step 1: Preheat the oven to 180 degrees. Place the onion, garlic, potatoes and chicken in a large bowl. Add salt, pepper, half the amount of oregano and/or thyme, and the spice mixture. Mix and put them in a pan, the potatoes below and the legs on top.
Step 2: Place a tomato slice on each chicken piece and then the celery.
Step 3: Pour over the olive oil, the lemon mixed with the mustard and a glass of water.
Step 4: Bake in the oven for about 1 hour and 30 minutes, until the potatoes are soft and the legs are coloured. Serve with lettuce salad, fresh onion, dill and lemon.
