Squid with black olives, pine nuts, and raisins is an easy and quick dish for those who are fasting.
Materials
Five cans of Safcol squid of 170 g.
1 cup black olives
1/2 cup extra virgin olive oil
One jar of chopped tomatoes
Two cloves of garlic, chopped
1 cup raisins
One hot pepper, chopped
1 cup pine nuts
½ cup chopped parsley
salt, freshly ground pepper
Procedure
Step 1
Soak the raisins in warm water for 20 minutes. Remove the pits from the olives.
Step 2
Heat the extra virgin olive oil in a large, non-stick pan or a small pot. Sauté the pepper for a few minutes, and add the garlic. Let it sauté without browning.
Step 3
Add the tomatoes, raisins, pine nuts and olives. Boil for 2-3 minutes and add the squid. Season with salt and pepper and continue boiling on medium heat for 15-20 minutes. Sprinkle with parsley. Toast a few slices of bread and serve the meal with rice pilaf.
