Spicy calamari is another perfect recipe to enjoy, whether or not you're fasting.
Materials for 4-5 servings:
80 ml extra virgin olive oil
One large onion, chopped
Two cloves garlic, chopped
One red pepper, chopped
1 kilo of calamari in rings
100 ml dry white wine
One small bunch of fennel chopped
100 ml tomato juice
400 gr. whole peeled tomatoes
1 tsp. sugar
One bay leaf
½ tsp. sweet or hot bukovo
150 gr. green olives, sliced
salt, black pepper
Procedure
Step 1
In a pot, sauté the onion, garlic, and pepper with half the olive oil until they release their aromas. Add the calamari and the wine, and simmer for 5 minutes.
Step 2
Add the fennel, whole tomato, bay leaf, sugar, remaining olive oil, salt, and pepper. Close with a lid and simmer over low heat for about 1 hour or until the sauce thickens.
Step 3
Add the olives for about 5 minutes before removing the pan from the heat.
Step 4
Serve the calamari with their sauce and some chopped fennel in addition.
