These lamb chops are even better with the green herb sauce!
Materials for four servings:
1 kg of lamb ribs
1 tsp. of peppercorn
2 tsp. Flower of Salt (fleur de Sel)
1 tsp. fresh oregano, chopped
1 tsp. sumac
½ tsp. cumin
some fresh thyme, chopped
some fresh rosemary, chopped
For the salsa
One bunch of spring onions
One clove of garlic
1 tsp. of caper
½ bunch of parsley
½ bunch of dill
½ bunch of coriander
½ bunch of chives
a few leaves of tarragon
a few mint leaves
One lime, the zest
Three tsp. of extra virgin olive oil
Side dish
Vegetables of your choice grilled over coals
Procedure
Step 1
Salsa: Put all the ingredients together in a blender and pulse it for one second just a few times to make a sauce at a consistency of your choosing. Grill the ribs for 4-5 minutes on each side.
Step 2
Beat the spices and herbs in a mortar and marinate the ribs.
Step 3
Serve them hot, accompanied by herb salsa and grilled vegetables.
