If you've been to Sifnos, you would've tried the traditional slow-roasted mastello lamb. The easy version with chicken will also delight those who try it.
Materials for six servings:
1,500 gr. chicken, in portions
One bunch of dill, chopped
400 gr. dry red wine
salt
black pepper
Procedure
Step 1
In the evening, marinate the chicken and pour the wine over it. The next day, preheat the oven to 200°C.
Step 2
Season the chicken with salt and pepper, sprinkle it with dill, and place it in a Dutch oven or clay pot.
Step 3
Bake the chicken for 20 minutes at 200°C in the oven and continue for another 2 hours at 130°C. In the last 20 minutes, open the lid and cook until the chicken takes on colour.
Step 4
Serve with fried potatoes and pour over the juice left in the pan.
