Tourlou with white beans and summer vegetables

Tourlou is the most summery, easy food. Considering it is summer you should already have most of the needed vegetables in your fridge, and the combination with the white beans elevates the dish to the next level!

Materials for four servings:

50 ml extra virgin olive oil
3 potatoes, quartered
1 large onion, chopped
4 zucchini, quartered
4 peppers, coarsely chopped
1 carrot, quartered
1 tsp. celery, chopped
3 tomatoes, coarsely chopped
400 gr. tomato sauce
1 tsp. dried basil
½ tsp. dried thyme
200 gr. white beans that we have already boiled earlier
½ tsp. sweet bukovo, optional
freshly ground black pepper


Step 1

In a pot, boil the beans with plenty of water until soft and drain. In the same pot, heat the olive oil and sauté the potatoes for two minutes. Continue by adding the chopped onion and salt and sauté for one minute. Add the courgettes, peppers, carrot, and celery and continue to sauté for two minutes.

Step 2

Finally, add the beans, tomatoes, tomato sauce, 150 ml hot water, basil, thyme, bukovo, salt and pepper. Cook the food for 40 minutes on medium heat, and if additional water is needed, add it until the vegetables are soft.

Step 3

Finally, turn up the heat for 10 minutes to soften the food. Serve the tourlou with feta and bukovo.
