Beans with octopus and potatoes

One of the most delicious ways to cook green beans is with octopus.

Materials

1 kilo of green beans, cleaned
1 kilo octopus cleaned
Two large potatoes, cut into wedges
One finely chopped onion
One clove of garlic
One shot of apple cider vinegar
250g grated tomato
1 cup chopped parsley
One bay leaf
½ cup extra virgin olive oil
1 tsp. sugar
salt, freshly ground pepper

Procedure

Step 1

Place a heavy-bottomed pot over high heat until it heats up well, and place the octopus in it. Cover with the lid, lower the heat (to 3 on a scale of 9 or 1 on a scale of 3) and let the octopus cook in its juices for about 1 hour. In between, check if you need to add a little water. Drain, keeping the remaining juice, and set the octopus aside to cool.

Step 2

Put the pot back on high heat, add the olive oil and saute the onion and garlic for 1-2 minutes. Add the tomato and sugar, season with salt and pepper and cook for 5 minutes on high heat. Add the potatoes and beans and bring the food to a boil.

Step 3

Cut the octopus into pieces and put them in the pot along with its juices. Lower the heat and continue cooking until the vegetables are cooked. Towards the end, mix the food and the parsley and serve once it has cooled slightly.
