Brighton-Le-Sands, Sydney – Ammos, the latest restaurant from acclaimed chef Peter Conistis, officially opened its doors on July 12th at the Novotel in Brighton-Le-Sands.
The restaurant offers scenic views of the beach at and a menu focused on Greek seafood.
Drawing inspiration from his family's culinary traditions and his own 30-year career, Conistis has crafted a menu that blends classic Greek elements with modern techniques.
Highlights include shellfish saganaki, fire-roasted whole lobster with a la Grecque butter, and aged pork Arizona with apple tzatziki.
Ammos seats 160 guests across its indoor-outdoor space, featuring a dedicated seafood station and a centrally-located mezze station. The wine list, curated by Sommelier John Clancy, dedicates a quarter of its offerings to Greek varieties, including lesser-known bottles of Savatiano, Thrapsathiri, and Malagousia. A roving ouzo trolley adds to the authentic Greek dining experience.
Executive Chef James Roberts, who previously collaborated with Conistis at Ploos, helms the kitchen. Ammos is open for lunch and dinner from Wednesday to Sunday.
Ammos has a seasoned senior team. Executive chef James Roberts is the former head chef at Ploos restaurant at The Rocks, while venue manager Kosta Lambroglou previously worked at Felix and Mr Wong.
