These delicious herring croquettes are best with a tomato paste dip. With this recipe, you will easily and quickly have a nice appetiser for your ouzo or tsipouro.
Materials for four servings:
For the croquettes
100 gr. finely chopped herring fillet
150 gr. Flour for all uses
½ tsp. baking powder
One egg yolk
100 ml of beer
2 tsp. water
1 tsp. tablespoons of lemon juice
½ lemon, the zest
1 tsp. chopped dill
black pepper
For the tomato paste dip
100 gr. tomato paste
One tablespoon of honey
One tablespoon of white vinegar
Two pinches of oregano
One pinch of cumin
salt, black pepper
Procedure
Step 1
For the dip, mix all the ingredients well.
Step 2
Mix all the ingredients for the croquettes except the herring in a bowl until you get a smooth batter. Add the herring and mix. Put a pan on medium to high heat and fill it with sunflower oil up to the middle.
Step 3
Dip a tablespoon in a cup of water, take spoonful’s of the batter, and fry the croquettes on both sides until golden brown. Drain on kitchen paper.
Step 4
Serve the croquettes warm with the dip.
