It is a very easy and delicious omelette, which can also be served as a main course.
Materials for four servings:
1/4 cup extra virgin olive oil
One onion
One red pepper
One green pepper
Two medium tomatoes
Two country sausages (without the outer casing)
Six eggs
30ml. milk
200 gr. feta, crumbled
3 tsp. chives
salt and black pepper
Procedure
Step 1
Preheat the oven to 160°C with the fan on. Wash and clean all the vegetables. Cut the peppers and onion into thin slices, the tomatoes into cubes and the sausages into thin slices.
Step 2
Put the eggs and milk in a bowl, season with salt and pepper, and beat well with an egg beater. Add all the vegetables, sausages, grated feta cheese, and chives to the eggs.
Step 3
Grease a medium-sized Pyrex well and pour in the mixture. Bake for about 20' or until the omelette is firm and the surface is well browned.
