Okra with octopus is a delicious dish made with fresh or frozen okra.
Materials:
One octopus, about 1 kg
1 kilo of fresh okra, cleaned (or frozen when not in season)
½ cup extra virgin olive oil
1 cup chopped onion
Two bell peppers, sliced
Four cloves of garlic, chopped
250g grated tomato
Four tsp. chopped parsley
½ tsp. cumin
1 tsp. of sugar
3 tsp. balsamic vinegar
salt, pepper
Procedure
Step 1
Put a pot with a heavy bottom on the stovem and after it is well heated, add the octopus. As soon as it starts to release its juices, lower the heat, cover the pot with a lid, and let it boil in its own juices for about 45 minutes until it becomes soft. Once it is ready, let it cool down a bit and then cut it into large pieces.
Step 2
Preheat the oven to 180°C. In a pot with a lid, pour all the remaining ingredients of the recipe and mix them well with your hands to combine their aromas and flavours.
Step 3
Place the octopus pieces in between, cover the pot and bake the food for 45-60 minutes in the oven, stirring a couple of times during baking.
Step 4
Serve hot, sprinkling with fresh parsley leaves.
