Marble cake with olive oil from Stelios Parliaros

The delicious Greek marble cake in a fasting version is full of aroma and the taste of olive oil.

Materials:

350 gr. olive oil
350 gr. orange juice
300 gr. powdered sugar
1 tsp. baking powder
600 gr. flour
½ tsp. cinnamon
20 gr. cocoa

Procedure

Step 1

Put the olive oil, orange juice, powdered sugar in a large bowl and mix.

Step 2

Then add the baking powder and flour. Divide the mixture into two equal parts: add the cinnamon to one and the cocoa to the second.

Step 3

Butter and flour a 26x10 cm cake tin and pour the cinnamon mixture into half of the tin and the cocoa mixture into the rest.

Step 4

Bake in a preheated oven at 160°C for about 50 minutes and at 150°C for another 15 minutes.
