This delicious rosti is an ideal choice for a hearty brunch that will be loved by young and old alike.
Materials for four servings:
Four medium potatoes, coarsely grated
2 slices smoked steak, chopped
60 ml extra virgin olive oil
1 small onion, thinly sliced
60 gr. butter, frozen, in pieces
3 slices of gouda cheese in pieces
Two slices of cheddar, cut into pieces
50 ml full cream milk
salt, black pepper
Procedure
Step 1
Put the grated potatoes in a strainer, salt well, and let them drain their liquid on absorbent paper.
Step 2
In a small non-stick pan, sauté the smoked steak until browned. Leave it aside.
Step 3
In a large non-stick pan, heat the olive oil over medium-low heat. Sauté the onion for about 2-3 minutes or until softened.
Step 4
Add the grated potatoes and, little by little, the butter, mixing in between with a spoon.
Step 5
Cook for about 8 minutes or until the potatoes are soft and brown on one side.
Step 6
With a large plate, carefully turn the roast on the other side (as we do with an omelette).
Step 7
Sprinkle the top with gouda cheese and the meat, pour over the milk, and close with a lid. Leave until the other side is cooked, the cheese melts, and the rosti is golden brown, for about 6-8 minutes.
Step 8
Season with salt and pepper and serve hot.
