Easy galatopita without phyllo

This is among the easiest galatopita recipes one can come across.

Materials for 6-8 servings:

1 litre of fresh milk
500 ml full milk cream
200 gr. sugar
Four eggs
120 gr. fine semolina
30 gr. corn flour
Two vanilla pods
½ orange, the zest
50 gr. butter cold, cubed

For coating

One egg at room temperature
2 tbsp sugar
2 tbsp water

For garnish (optional)

cinnamon
powdered sugar

Procedure

Step 1

In a large saucepan, heat the milk, full milk cream, and sugar over medium heat and stir until the sugar melts. Remove from heat and let cool a little.

Step 2

Beat the eggs well in a bowl. Add the semolina, corn flour, vanilla, and orange zest. Mix well.

Step 3

Take the mixture with the spoon and pour it into the eggs, mixing vigorously. Repeat the same process two more times.

Step 4

Transfer this mixture back to the pot, incorporating it with the milk in the pot.

Step 5

Put the pot on medium heat and stir until the mixture starts to thicken. It is ready when the cream stands on the back of the wooden spoon. Stir in the cold butter in cubes, stirring off the heat until it melts.

Step 6

After buttering and sprinkling the mixture with semolina, pour the mixture into a 33x25 cm rectangular pan, shaking off the excess.

Step 7

Coating: Beat the egg together with the sugar and water. Pour the mixture over the cream in the pan.

Step 8

Bake in a preheated oven at 180°C for about 1 hour. Cover it with aluminium foil to prevent burning if it starts to colour.

Step 9

Once it has cooled out of the oven, serve with powdered sugar and optional cinnamon.
