Rooster with wine, Chios mastic and cardamom is a unique and delicious dish.
Materials:
One rooster, about 1½ kilos, in portions
One large onion, grated
1 cup extra virgin olive oil
Three cloves of garlic, chopped
1 tsp. Chios mastic
Four cardamoms
Two glasses of white wine
1 tsp. mild mustard
salt
Procedure
Step 1
Collect the seeds from the cardamom. Put a tablespoon of salt, the mastic and the cardamom seeds in a mortar and pound them with the pestle until they become a homogeneous paste.
Step 2
Heat the olive oil in a large, shallow pot and brown the chicken pieces.
Step 3
Add the grated onion and garlic and mix well. Add the cardamom, mastic, and mustard mixture. Deglaze with the wine, bring to a boil, cover the pot, and cook over low heat for about 1 hour.
Step 4
Uncover, turn up the heat and let the sauce set. Serve the rooster with fries.
