Tiganito Gala (Fried Milk)

Tiganito Gala is a unique dairy dessert that can be enjoyed by all.

Materials:

200 ml of milk
1 banana
4 medium egg yolks
100 gr. brown sugar
80 gr. butter
150 gr. all purpose flour
2 cinnamon sticks

For the breading

2 medium-sized eggs
100 gr. breadcrumbs
10 gr. brown sugar
500 ml sunflower oil

Procedure

Step 1

In a blender, beat the banana with the egg yolks. Boil the milk, sugar and cinnamon in a small saucepan and leave them covered for 10 minutes.

Step 2

In a medium-sized saucepan, heat the butter over high heat until it melts, add the flour and stir to brown. Remove from the heat and strain the flavored milk in 3 stages, mixing well with a wire.

Step 3

Put the pot back on medium-high heat and stir very well until the mixture is incorporated. Pour the banana mixture into the saucepan without removing from the heat and stir.

Step 4

Pour the entire mixture into a 25x25cm square dish. Cover with a film to be in contact with the cream and place in the refrigerator to cool for four hours. Cut the cold cream in the shape of your liking.

Step 5

Breading: Beat the eggs in a bowl. On a plate, mix the breadcrumbs with the sugar. Pass the pieces of cold cream through the egg and then through the breadcrumb mixture. Fry them in hot sunflower oil and drain them on kitchen paper. Sprinkle them with sugar and serve.
