Manitaropita: The perfect mushroom pie

The rich and very tasty filling of this Manitaropita (mushroom pie) will delight you. It can be enjoyed as an appetiser at the Sunday table or as a meal on weekdays, together with a salad.

Materials:

• one package of ready-made puff pastry sheets
• 500g oyster mushrooms in small pieces
• 250g small white mushrooms
• five fresh onions, finely chopped
• two cloves of garlic, chopped
• ½ cup chopped dill
• ½ cup chopped parsley
• one coffee cup of extra virgin olive oil
• 250g coarsely grated kaseri
• 250ml cream
• three eggs
• salt, pepper

Procedure
Step 1

Heat the olive oil in a deep, non-stick pan and lightly sauté the onions, mushrooms, and garlic until they dry out of their liquid. Remove the pan from the heat and add the dill, parsley, salt, and pepper. Let the mixture cool.

Step 2

Preheat the oven to 180 degrees and butter a long, narrow pan. Lay the first sheet of puff pastry over the bottom and sides of the pan, pricking the dough with a fork in several places.

Step 3

Beat the eggs with the cream and add the grated kaseri. Add the mushroom mixture and mix. Pour the final mixture over the puff pastry dough and cover the pie with the second sheet of puff pastry.

Step 4

Cut the excess dough slightly outside the pan's circumference. After wetting the dough all around, grab it with the edges of the bottom sheet and press with your fingers to join.

Step 5

Bake the pie in the oven until the puff pastry is well cooked. Serve the pie hot or warm, cut into pieces.
