Salad with lentils, sun-dried tomato and chicken

This is hearty salad that combines chicken with lentils. The dressing makes a wonderful difference in taste.

Materials for four-five servings:

400 gr. chicken fillet, grilled, cut into strips
300 gr. lentils, boiled
2-3 sun-dried tomatoes in oil, chopped
6-7 cherry tomatoes, cut in half
6-7 green olives, pitted, cut into rings
Three spring onions, finely chopped
One pickled Florini pepper, chopped
3 tsp. parsley, chopped
1 tsp. fresh thyme

For the sun-dried tomato dressing

Two sun-dried tomatoes in oil
One small clove of garlic
½ tsp. honey
juice of one orange
2 tsp. tablespoons balsamic vinegar
50 ml extra virgin olive oil
black pepper

Procedure

Step 1

Dressing: Mash all the ingredients well in the blender until they are homogeneous. Leave it aside.

Step 2

Put all the salad ingredients in a salad bowl and mix. Pour over half of the dressing and leave it in the fridge for 20-30 minutes for the flavours to blend.

Step 3

Just before serving the salad, add the chicken and the rest of the dressing.
