Borlotti beans with Greek sausage and leeks

Borlotti beans with Greek sausage and leeks is a delicious dish that will become a staple for you.

Materials:

One package of borlotti beans
1 cup chopped onion
1 cup chopped parsley
Two leeks halved lengthwise and then sliced
Two sliced country sausages
½ cup extra virgin olive oil
2 tsp. tomato paste
½ tsp. sweet paprika
salt, pepper

Procedure

Step 1

Steam the leeks in a little water to soften them. As soon as they drink their water, add the olive oil and the chopped onion. Sauté them for a while longer, then add the beans to the pot. Mix them for a while, season with salt and pepper, sprinkle with paprika, and pour the paste dissolved in a cup of hot water.

Step 2

Simmer until the beans are tender. Maybe the food needs extra water in between.

Step 3

Cut the sausages into slices and cook them without any other oil in a non-stick pan, first on one side and then on the other side. Discard the fat from the pan and pour the cooked sausages into the pot with the food.

Step 4

Cook the food a little longer until all the ingredients bind together, and the beans are well-cooked. Before turning off the heat, sprinkle the chopped parsley over the mixture and mix.

Step 5

Let the food cool down a bit, and then serve it on plates.
