Trahanas with feta (Trahanosoupa) is a classic and favourite combination. This traditional soup will be taken to the next level with bacon and a little cream.
Materials
• one glass of Trahana
• 150g feta
• 1½ litres of chicken stock
• 3 slices of bacon
• 1 tsp. sweet paprika
• one grated onion
• 2 tsp. extra virgin olive oil
• juice of 1 lemon
• 1 cup of cream milk for coffee
• salt, pepper
Procedure
Step 1
Pour olive oil and onion into a large pot. Sauté for 2 minutes until it smells musky, add the trahana and continue sauteing with the onion for another 2-3 minutes.
Step 2
Add the warm stock and let it slowly boil. Boil the trahana. While it's boiling, add the salt, pepper, paprika and lemon juice. Immediately after, mix well. Finally, pour the cream and keep the soup warm.
Step 3
In a bowl, melt the feta with a fork. In another bowl, chop the bacon into cubes and sauté them in a pan without oil until they become crispy.
Step 4
When it's time to serve your soup, garnish it by placing a spoonful of melted feta cheese in the centre of each plate and sprinkle the cooked bacon around.
