Ingredients (Serves 1)

• Three large tomatoes, chopped
• One cucumber, diced
• One onion (red or white), thinly sliced
• ½ tsp dried Greek oregano
• 150g (5.3 oz) feta cheese, cubed
• Eight black olives, pitted
• Olive oil, to taste
• Red vinegar, to taste
• Salt, to taste
• A handful of capers

Instructions

1. Combine the chopped tomatoes, diced cucumber, and sliced onion in a large bowl.
2. Sprinkle the dried oregano over the vegetables.
3. Add the cubed feta cheese and black olives to the bowl.
4. Drizzle with olive oil and red vinegar, adjusting to your taste.
5. Season with salt and toss gently to combine all the ingredients.
