Sydney's dining scene is in for a treat with the upcoming launch of Ammos, a brand-new restaurant by Peter Conistis, the acclaimed chef who pioneered modern Greek cuisine in the city.

Conistis, who recently departed Alpha restaurant, has set his sights on the vibrant beachside suburb of Brighton-le-Sands. Ammos, slated to open in May, promises a fresh take on Greek fare with a stunning bayside backdrop.

This 350-seater restaurant takes its name from the Greek word for "sand," perfectly reflecting its beachside location. Diners can expect a delectable poolside menu alongside the main offerings designed by Conistis's masterful hand.

"It takes a lot for me to get involved in these things," says Conistis, "but the moment I saw the space, I knew." Designed by Paul Papadopoulos, the Ammos interior is nearing completion and boasts a massive terrace with breathtaking bay views.

Beyond the idyllic setting, Conistis is particularly drawn to Brighton-le-Sands's strong Greek heritage, creating a cultural connection that fuels his culinary vision for Ammos.

This exciting new venture comes after Conistis's departure from Alpha, where his replacement, celebrity chef George Calombaris, has yet to unveil a new menu.
