A quick summer pasta with red sauce is always delicious, especially if the sauce is enriched with nutritious red lentils and delicious sun-dried tomatoes!
Materials for four portions:
500 gr. boiled pasta, your choice
150 gr. red lentils
30 ml extra virgin olive oil
Three cloves garlic, sliced
1 ½ tsp. tomato paste
150 gr. sundried tomatoes
1 tsp. Tablespoons balsamic vinegar
½ tsp. Dried oregano
½ tsp. Dried thyme
500 gr. fresh tomatoes, grated
Eight fresh basil leaves
Grated pecorino or vegan cheese for serving
Salt
Freshly ground black pepper
Procedure
Step 1
Boil the red lentils for 10 minutes and strain them.
Step 2
In the blender, puree the sun-dried tomatoes with 100 ml of water. At the same time, heat the olive oil in a saucepan and sauté the garlic until it releases its aroma. Add the tomato paste, sun-dried tomatoes, balsamic vinegar, dried herbs, salt, pepper, grated tomatoes and lentils.
Step 3
Cook for 15 minutes. As soon as the sauce thickens, add the basil and remove the pan from the heat.
Step 4
Serve the pasta with the hot sauce and grated pecorino or vegan cheese.
