Karidopita: useful tips for making the perfect walnut pie

One of our favourite winter sweets is karidopita (walnut pie). However, it is not a dessert we can make every day, as it is pretty demanding in its preparation. It takes time and passion, but the result will definitely reward us.

Before you start making this favourite dessert, we have gathered some tips to help you get a guaranteed good and tasty result.

Helpful tips:

  • An important step at the beginning of the preparation is to separate the yolks from the whites. Beat the yolks with the sugar in the mixer for at least 10 minutes until they become frothy and the mixture does not smell like eggs. Then, with the egg whites, we will make a meringue, which will be like a foam and mixed with the rest of the mixture with a marize with gentle movements.
  • We put the walnut powder in a blender and beat it until the walnuts are the size we want them to be in our pie.
  • Before filling our mould, we butter it and sprinkle it with breadcrumbs.
  • Add the peel of a lemon to the syrup to give it extra flavour.
  • Syrup either with cold sweet and warm syrup or cold syrup and warm sweet.
