Brownies with olive oil and walnuts

Chocolatey and delicious, this brownie is the perfect accompaniment to your morning coffee!


300g couverture chocolate, broken into pieces
5 eggs
1 cup brown sugar
1 cup olive oil
¼ cup cocoa
¾ cup self-raising flour
100g coarsely chopped walnuts


Step 1: Preheat the oven to 180°C. Melt the couverture in a bain-marie and at the end, mix in the olive oil.

Step 2: In a bowl, sift the flour with the cocoa. In a separate bowl, beat the eggs with the sugar.

Step 3: When the eggs and sugar are combined, stir in first the couverture mixture and then the flour mixture.

Step 4: Line a 25x30cm oblong pan. with a piece of non-stick baking paper and pour the mixture inside. Sprinkle the walnuts on top and bake in the oven for about 15-20 minutes, so that it remains moist inside.
