'Eggcetera' American family diner serving Greek flavours

Earlier this year, lifelong Greek chef John Kladis opened up ‘Eggcetera’ at Summer Road Plaza in Fort Myers, Florida.

Originally from the island of Zakynthos, Kladis runs his new family business along with his wife Konstantina, serving traditional American food and Greek dishes too.

John began cooking at a young age, as he enjoying being in the kitchen with his mother. He recalls, “It was my passion. I still wouldn’t trade it for anything.” At the age of 19, John joined the Greek navy and worked in naval kitchens where he helped feed over 2,000 people a day, which he says wasn’t easy. “We had a lot of line cooks and chefs. But it gave me something I hadn’t experienced before.”

At Eggcetera, “we sell lots of crepes, potato pancakes, omelets, and skillets. It’s all fresh. We make everything here, and we buy local if we can. That’s how we do it, with the best ingredients available,” John notes.

Our favourites on the menu are the Spartan Omelette (with spinach, tomato, mushroom, & Feta cheese),Greek Omelette (with gyro meat, tomato, onion, & Feta cheese), Strawberry Cheesecake French Toast (brioche bread stuffed with strawberry & cream cheese blend, topped with fresh strawberries & drizzled with strawberry syrup), the Greek skillet (with gyro meat, tomato, onion, & Feta cheese) and the Baklava.

Eggcetera has become the new favourite brunch spot in the city, despite only being open for a short period of time so if you are ever in the area, make sure you arrive on an empty stomach and dine at this very busy eatery!
