Alpha’s new owner, Con Dedes, announced that Calombaris’ dishes would be phased out of the menu while keeping the focus on a lighter menu style introduced by the chef. Dedes praised Calombaris’ contribution but stated that the new direction “just didn’t match” their vision.
“I had conversations with George [about staying on after the change in operator], but we agreed mutually not to join forces. To George’s credit, he lightened up the menu, which is the direction we’re taking,” Dedes says.
Calombaris expressed his fondness for Alpha but acknowledged the new circumstances. He hinted at exploring other opportunities in Sydney while remaining open to future collaborations within the Public Hospitality Group.
Dedes is supporting head chef Alessandro Mandelli at Alpha. Mandelli has previously worked with both Conistis and Calombaris. They are working on setting a new direction for Alpha’s menu, which will blend Greek classics with modern dishes, focusing on plenty of seafood.
