The menu, created by Sotiris Evangelou and Asterios Koutsidis, centres on Mediterranean cuisine with ethnic touches – for example, a trilogy of carpaccio of seabass, tuna and salmon is flavoured with both classic Greek masticha and Japanese yuzu.
