Peas with Florina peppers

Peas may seem boring, but when combined with various vegetables, such as Florina pepper, they acquire a special taste and extra deliciousness!

Materials:

One large onion
Two spring onions
Two Florina peppers
One large potato
One large carrot
50ml extra virgin olive oil
400g peas frozen or fresh
300ml vegetable stock or water
One small bunch of dill
1 tsp. sweet paprika sweet
salt, freshly ground pepper

Tips:

You can also add some chopped tomato or tomato paste if you want.

Procedure

Step 1

Clean and chop all the onions and peppers in a large bowl and dice the potato and carrot.

Step 2

Heat half the extra virgin olive oil in a saucepan, sauté the vegetables and peas for 2-3 minutes, stirring often with a wooden spoon.

Step 3

Add the vegetable stock, the remaining extra virgin olive oil, and the chopped dill and season with salt and pepper.

Step 4

Lower the temperature and simmer for about 40 minutes until the vegetables are soft and the food is left with only its oil.
