Vegan chocolate bites with coconut filling

If you love the chocolate-coconut combination but are careful about your diet or are fasting, we have a low-calorie option for a delicious chocolate dessert with just four ingredients - chocolate, coconut, vegetable milk and dates, which are sweetly mixed to create a nutritious and vegan snack that gives us energy without burdening our health.

The sweetness of dates once again works its magic in this easy and quick recipe. It will become the #1 choice for afternoon coffee and guilt-free snacking at home, on the go, or in the office.

Ingredients

Ten royal dates
One bag of grated coconut
200 g. dark chocolate
Plant milk

Procedure

Prepare the dates: Cut and split the dates in half, removing the pits. Place them in a shallow pan.

Prepare the filling: Pour about half a bag of coconut into a bowl. Add 1-2 tsp of plant milk.  The plant milk needs to bind with the grated coconut, creating a paste to fill our dates. Adjust the amount of milk and coconut depending on how much filling we want on our dates. After preparing the filling, put 1 tsp. inside each date. Press the date well to close it, set it aside and continue the process with the remaining dates.

Melt the couverture: Cut the chocolate into pieces and melt it in a bain-marie or the microwave. After the chocolate is ready, dip the dates into it one by one with tongs so that they are well covered from all sides. Once you have completed the process, put the shallow pan with the chocolate dates in the refrigerator for at least half an hour.

Tips:

  • After covering the dates with chocolate, and in case you don't have much time, you can speed up the stabilisation of the ingredients by putting them in the freezer (instead of the fridge). You will need to get them out much faster, in about 10-15 minutes.
  • You can keep the chocolates in an airtight food container in the refrigerator for up to 5 days. If you want to preserve them longer, the best solution is to put them in the freezer and take as many as you want at a time. In this case, after taking them out of the freezer, you will need to leave them for 4-5 minutes at room temperature.
