Preparation time: 10 minutes
Cooking time: 40 minutes
Serving size: 4 people

Ingredients:

  • 4-5 ripe medium-sized tomatoes, finely chopped
  • 2 onions, finely chopped
  • 2 garlic cloves, sliced or 1 teaspoon of dried garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • 1 cup of cream or evaporated milk
  • 1 chicken cube, diluted in 4 cups of water or fresh chicken broth
  • 2 tablespoons of brown sugar, according to taste
  • 2 teaspoons of tomato paste
  • 1 teaspoon of cornflour, diluted in cold water (optional)

Instructions:

  1. In a medium-sized saucepan, heat the olive oil over medium heat. Add the chopped onions and garlic slices. Sauté them until they become translucent and fragrant.
  2. Add the chopped tomatoes to the saucepan and bring them to a boil. Reduce the heat to low and let it simmer for about 20 minutes until the tomatoes become soft and release their juices.
  3. Add the diluted chicken cube or chicken broth to the saucepan and mix well. Bring the mixture back to a boil and let it simmer for another 20 minutes to allow the flavors to meld together.
  4. Stir in the cream or evaporated milk, brown sugar, and tomato paste. Season with salt and pepper according to your taste preferences. Mix well and let it simmer for an additional 5 minutes, ensuring all the ingredients are well combined and the soup is heated through.
  5. If you prefer a thicker consistency, dilute 1 teaspoon of cornflour in cold water and gradually add it to the soup while stirring continuously. This step helps thicken the soup without causing it to curdle.
  6. Once the soup reaches your desired consistency, remove it from the heat.
  7. Serve the tomato soup hot, garnished with a drizzle of cream, a sprinkle of black pepper, and some freshly chopped cilantro or parsley if desired. Enjoy!

Note: This soup pairs well with grilled cheese sandwiches or crusty bread on the side.
