Oatmeal cookies with raisins

Delicious and healthy oatmeal cookies with raisins are a great way to give yourself more energy in the morning.

Materials:

Two eggs
1 cup brown sugar
zest and juice of 1 orange
½ tsp. cinnamon
1 cup seed oil
1½ cups rolled oats
1 cup all-purpose flour
One bag of baking powder
3/4 cup coarsely ground walnuts
1 cup Corinthian raisins

Procedure

Step 1

Preheat the oven to 190°C and line two trays with greaseproof paper. Beat the eggs with the sugar in a bowl with a whisk. Add the oil, zest, orange juice and cinnamon, continuing to beat until the ingredients are homogenised.

Step 2

In a separate bowl, mix the flour with the baking powder and the oats. Pour them into the egg mixture, mixing with a spatula until they are homogenised in the mixture.

Step 3

Finally, mix the raisins and walnuts. With a teaspoon, divide the mixture into the pans, leaving enough space between them because they will swell and spread out enough during baking. Bake the cookies in the oven for about 20 minutes.

Step 4

Take them out of the oven and let them cool before removing them from the parchment paper because otherwise they will fall apart. You keep them in plastic containers.
