Stelios Parliaros is back again with a delicious summer cake made with pineapple juice.

Materials for 8-10 servings:
3 eggs
230 gr. granulated sugar
130 ml. pineapple juice
120 ml. corn oil
250 gr. flour for all uses
1 tsp. sweet baking powder
Procedure
Step 1: Beat the eggs with the sugar until white and fluffy. Stop the beating, pour half the juice and half the corn oil and mix gently with a whisk.
Step 2: Add half the sifted flour and baking powder. Continue mixing and the same process with the rest of the ingredients.
Step 3: Pour the mixture into a buttered and floured cake tin and bake in a preheated oven at 160°C for 40'. Leave to cool for a while and unmold.
