Ladenia with tomato paste and dry oregano

This ladenia is a kind of open pie or pizza with few ingredients, which we all have at home and is a must for the fasting period.

Materials for 8-9 servings:

For the dough

10 gr. Fresh yeast
1 tsp. sugar
320 ml of water
350 gr. flour for all uses
50 gr. hard flour
50 ml extra virgin olive oil
1 tsp. salt

For the filling

200 gr. tomato paste
50 ml of water
80 ml extra virgin olive oil
1½ tsp. sweet dried oregano
3 large onions, sliced
salt, freshly ground pepper

Procedure

Step 1

Dough: Dissolve the yeast and sugar in 100 ml of heated water and mix with 2 tsp of flour. Put the flour in a bowl, add the salt and mix. Add the yeast, the rest of the water and the extra virgin olive oil, knead for 5' and leave the dough, covered, in a warm place (without wind) for 1 hour.

Step 2

Grease a 38-40 cm pan, put the dough in it, sprinkle with half the olive oil and open it with our fingers.

Step 3

Filling : In a bowl, mix the tomato paste with the water and 20 ml of extra virgin olive oil, add the oregano, salt and pepper. Spread the entire mixture on the surface of the dough, scatter the onions, add salt, pepper, oregano and the remaining olive oil.

Step 4

Leave the ladenia for 15' in a warm place and bake in a preheated oven at 180°C, in the low position of the oven for 45'-50'.
