Odori earned a place in Europe's Top 50 for the second year in a row.
In a brilliant ceremony in Madrid, the 50 Top Pizza Europa 2024 results were announced, with Athens pizzeria Odori once again earning a spot.
Odori won 25th place among the best in Europe this year. In addition to the chefs, Manolis Lykiardopoulos and Thanasis Tsanakas, two of Odori's owners were present to receive the award, as was pizzaiolo (pizza maker) Nikos Sotiropoulos.
It is not the first time the pizzeria has received this distinction, having ranked 28th in 2023.
Nikos Sotiropoulos follows the Neapolitan school of pizza making. This means he lets the dough mature for about a day before adding the ingredients and baking it in a wood-fired oven.
He said, "The Neapolitan style, which we cook on high heat, needs between 60 and 90 seconds [in the oven]. In Rome, where they make the pinsa, which is more crispy, they have a lower heat and take a little more time [to cook]."
"But, under no circumstances does pizza need many minutes of contact with the fire," Sotiropoulos stressed.
