Baked pork chops with potatoes and bacon

This is a delicious, easy recipe for pork chops with potatoes in the oven. The addition of bacon gives it an extra great taste.

Materials for four servings:

Ten slices of bacon, coarsely chopped
50 ml extra virgin olive oil
One large onion, sliced
Two cloves garlic, coarsely chopped
Two bay leaves
Two spoons of mild mustard
Two lemons, the juice
Four large potatoes, sliced
1,200 gr. pork neck chops, boneless
salt, black pepper

Procedure

Step 1

Preheat the oven to 160°C with the fan and a frying pan to a high temperature. Put the bacon in a non-stick pan and sauté it until it begins to wilt. Remove it with a slotted spoon and put it on a plate. Add olive oil and onion in the same pan, season with salt and pepper, and fry until golden. Add the garlic and sauté for 1 minute.

Step 2

Remove from the pan. Add the bay leaves, mustard, and lemon juice to a pan and mix until the mustard dissolves. Add the potatoes and bacon and mix well. Season the meat well with salt and pepper and place it on top of the potatoes.

Step 3

Bake for 1 hour or until the meat and potatoes are well cooked. Then, turn the oven up to 180°C and bake for another 10 minutes.
