Sardines with tomatoes in the oven

In this delectable summer dish, sardines are baked simply with tomato in the oven, which gives it flavour and balances its oiliness.

Materials

1 kg filleted sardines
2-3 ripe tomatoes
3-4 cloves of garlic, finely chopped
oregano and/or thyme
juice of 1 lemon
some bukovo
One glass of white wine, dry (not retsina)
extra virgin olive oil
Salt Pepper

Procedure

Step 1

Chop the tomatoes and put them in a bowl with the garlic. Add whatever herbs you have (such as oregano or thyme), lemon juice, a little bukovo, salt and pepper.

Step 2

Preheat the oven to 180°C with the fan on. In a pan, lay out half the tomatoes. Place the sardines on top. After removing the bone, add salt, pepper, and the rest of the tomatoes. Add the wine and drizzle with olive oil.

Step 3

Bake the sardines in the oven for 20-25 minutes (depending on the size of the sardine). It makes an ideal match with fried greens and extra lots of garlic.
