Gigantes Plaki (Greek Baked Beans with Feta)

Try this easy and delicious way to cook gigantes, young and old will love it, and even those who don't like legumes!

Materials for four servings

  • 1/3 cup olive oil
  • One onion, chopped
  • Three cloves of garlic, finely chopped
  • 1 tsp. tomato paste soup
  • 1 ½ cups cherry tomatoes, chopped
  • ½ tsp. sweet cinnamon, powder
  • 1 large pinch of oregano, dried
  • 2 ½ cups giant beans, boiled
  • 125 gr. feta cheese, grated
  • 2 tsp. tablespoon flat-leaf parsley, chopped
  • salt flower, black pepper
  • wholemeal bread, warm, to serve

Procedure

Step 1

Preheat the oven to 180°C in the air. Heat the olive oil over low heat in a non-stick pan and sauté the onion and garlic with a pinch of salt for 5 minutes or until the onion softens. Add the tomato paste and sauté for 1 minute.

Step 2

Then pour the cherry tomatoes, cinnamon, oregano and giant beans into 250 ml of hot water. Add salt and pepper and simmer for 10 minutes. Then, transfer the food to a medium fireproof dish and bake in the oven for 25-30 minutes until it is left with its oil.

Garnish with feta cheese and parsley, and serve with warm bread.
