The festive table needs dishes with a special character. This particular recipe, which combines the acidity and aromatic character of citrus fruits with the sweetness of honey, is a delicious and interesting suggestion.
Materials:
4 turkey thighs
30-40 cloves
700ml chicken broth
500ml citrus juice (equal amounts of orange, tangerine, lemon)
250g honey
1 tbsp cornflour
1 kilo of small potatoes with their skins well-washed
4 tbsp extra virgin olive oil
Rosemary
salt and pepper
Procedure
Step 1
Score the turkey legs and stick the cloves on them.
Step 2
Mix the honey with 50ml of citrus juice and a little oil, and brush the turkey with ⅓ of the mixture.
Step 3
In a baking pan, roast the turkey with the broth, the remaining citrus juice and a little oil at 180 degrees for 30 minutes. After half an hour, turn the turkey legs over, brush them with another ⅓ of the honey mixture, season with salt and pepper and continue roasting.
Step 4
After 10 minutes, turn them over, brush them with the remaining mixture, increase the oven temperature to 200 degrees and bake for another 15 minutes.
Step 5
Bake the potatoes in the oven at 180 degrees for about 1 hour and 15 minutes, sprinkled with coarse salt, pepper, and rosemary and drizzled with olive oil. Serve the turkey with the potatoes and pour over the sauce.
Tips
To make a quick sauce to accompany the meat, take the juices from the pan in which you roasted the turkey and put them in a saucepan. Boil for 15 minutes, and thicken the sauce with the cornflour that you have dissolved in 1 tbsp. water.
