A day with Mary in the Kouzina

On Sunday, 7th March 2021, I was lucky enough to attend Mary Politis’ first Greek cooking class.

It was a delicious day in the kitchen at the Culinary School.

We were all transported to the kitchen of a Greek family home as we learnt how to prepare traditional Greek food using authentic family recipes.

Mary taught us how to create three Greek dishes. This class was fun and homely!

We made Spanakopita (spinach and cheese filo pastry), Soutzoukakia ston fourno (spiced meatballs with potatoes baked in an aromatic tomato sauce), and Galaktoboureko (syrup-soaked custard filo pie).

All ingredients and equipment were provided and at the end of the cooking class, each of us walked away with our creations.

There was also enough time in between each dish for little breaks with enough time to chat and share cooking stories.

We also took home Mary’s recipes so that we could perfect them ourselves and bring together our family and friends.

I thoroughly enjoyed the day and learnt so many tips.

From the beginning of the class, it was obvious that Mary was in her element. She has been cooking for many years and shared her passion for Greek food with us.

She also shared a lot of tips and what was special to her about each dish.
